And there are a lot of people doing education who don’t read as teachers, per se, who have businesses which are *much* more lucrative than what you’d be offered as a lecturer. (Technical authors / trainers / etc.)

Do you think teachers for super-niched-technical-thingy will have a viable market to make a living like this when there's no shortage of technical training/docs available for stuff already?

I personally have met at least 50 people who make a reasonable engineering salary doing that. “No shortage of information” doesn’t necessarily match with lived experience of customers or align with the value prop to the customer.
