"I don't believe you." I mean, you're welcome to believe what you want to believe, but to the extent that you trust me you should know I believe this representation. If this it isn't plausible given market close to you, perhaps give adequate consideration to changing markets.

I know it's just business, but I can't imagine accepting an offer from a company which lowballed that much. It seems really disrespectful, and I'd be constantly wondering "if they'll make me an offer $200k less than they think I'm worth, how else would they mistreat me"?

I think you're overthinking it Colin. What matters is how much *you* think you're worth. If you think you're worth more than they're offering you, leave. Otherwise stay. (Or leave anyway, like I did.)

My guess: knowledge workers’ worth cannot be quantified / linearly estimated by just looking at their achievements and/or social skills etc. The same person can be worth a lot more for some company than another, despite being the same person. Find who you are valuable to!
