Ha! I was assuming that the restaurant would just go out of business and the customer would be on the hook, like the people that buy Groupons in failing businesses.

At least in the US, unfulfilled future orders / subscriptions aren’t necessarily directly responsibility of the payment processor, but they are explicitly not the end consumer’s responsibility and the payment processor is the party the other players decided would be on the hook.
