I think you can 80/20 it with a good writer or product person that understands how to build captivating narrative. Most content developed for "informational" rather than "entertainment" purpose really drops the ball on this. Humans emotionally respond to narrative

for the same reason people remember and can quote “For sale: baby shoes, never worn” but not random facts about Nebraska

A lot probably hinges on the difference in content: Movies tend to be about the things that naturally interest humans, lectures not so much
I wouldn't give them that much credit. They get to select among a lot of already imagined, written, produced footage those that leave the strongest impressions. Often they spoil the movie, other times they just straight up lie about it. For years now I stopped watching trailers
