So many hotels I been in last few weeks in Japan are almost fully automated: self check-in, full-service laundromats, vending machines with anything you want (even ice) and self check-out. Only thing still human is cleaning, but for how long

I'm in Fukuoka and I think you're in Tokyo so not sure if names help, but most capsule hotels in Tokyo are super automated, most love hotels are too and many love hotels now are catering to foreign travelers too (to diversify I guess).

where do you stay Patrick? I'm planning a Japan trip right now and would love some recommendations

The supermajority of my nights in Japan are at our house or my wife's family's house. I recommend everyone try a ryokan at least once when coming to Japan. Probably spend 90% of my domestic leisure travel at them, 90% of domestic business travel at "cheapest salaryman hotel."

Another option I liked in Tokyo is serviced apartments. Contracts are one month long. They're kind of like an AirBnB, but professionally managed. Some are located in hotels.
