A thing I’ve always wanted is a cafe that prices by the seat-hour and varies it’s prices to maintain 90% fullness at all times. They can throw in menu items to the value of the hourly rate if you really want them. Think most people would hate it but I’d love it.

On the donation side, Ive seen a pizza place that you can buy a slice for others and they stick a coupon on the wall. If you cant afford a piece you just go grab the coupon that was already paid for and get your "free to you" slice. Maybe that gets you 20 min of seat time?
