I am aware of cultural reasons why upper class Americans believe home cooking to be better for them health wise than prepared food, but I think that it is unlikely a plate of pasta made by me and made by a professional are materially chemically distinguishable except by choice.

I find it hard to believe that industrial kitchens will get there unless they reinvent the entire supply chain given grocery stores. Or might as well stick to canned goods + hot bars. Also many challenges for dietary restrictions vs scale (customization is expensive).
