Pretty sure it's cost disease. Have to justify higher prices for sufficient revenue to retain labor and rent. Bigger portions are cost-effective and sufficiently valued by customers.

Agree with other comments -thought you were sarcastic but it’s the US. In European capitals especially in mid-upper restaurants portions are very small, sometimes ridiculous.
