Got an email from someone in Japan, introducing themselves in an English fashion (given name first).
Can I reply with "Dear $name-san," or should I stick with the English honorific?

Preferences differ on the matter among both Japanese speakers of Japanese, non-Japanese speakers of Japanese, and non-Japanese non-resident non-speakers of Japanese. I generally do the Miss Manners thing here and default to
$LAST_NAME-san but honor preferred stylings where known2 replies 0 retweets 3 likes
... and where they are linguistically and socially reasonable.
