I think it is underappreciated how much delivery apps are going to change food production and consumption, specifically via the mechanism of replacing expensive retail footage with relatively cheap industrial kitchens running multiple brands across all the apps.
I'm thinking that the same thing that works for pizza works for curry, beef bowls, tacos, and lets say 70~90% of restaurant meals served in NYC tomorrow.

Hm. So the obvious big player here is YUM! brands, who could distribute facilities but centralize & marshal orders. You could get pizza, tacos, fried chicken, etc. -- all they need is a strategic partner who understands how to do demand leveling & delivery route optimization.
