You can still have central matching and P2P settlement and thousands of micro-exchanges.
4. @bitfinex is working to provide a standardized interface to centralised matching for non-custodial exchanges. This is the next frontier.

Why it is not born yet such product?
Because in order to make it unstoppable it won't generate profits for the developers but just for who runs a micro-exchange node.
