It's kinda shocking if you think about it, but the ability to trade from any pair into any other pair where the DEX finds the optimal route in between is great UX and beloved by users. And not only has it not been invented by CEXs, it hasn't even been copied yet

Slightly cheating, as “DEX”s are by definition inefficient; trading isn’t continuous, it’s split across block intervals, so finding the most optimal route (out of all inefficient options) is easy Probably can’t easily do “guaranteed most optimal route” under real time trading

1/ It could be solved by a new order type that we could call cascade-FOK. The system calculates a possible route crossing multiple pairs and tries to execute all the different legs atomically. Either all succeed or none. ERC20 has that behavior embedded in smart contracts.
