Not relying on, but as a persisting layer? pure memory (without any persistence) sounds risky. Of course the matching itself would need everything in RAM for speed. So matching engine also (partly) node.js?

I always find the discrepancy between dev-count in core stuff (c++) and "frontend" (like node) quite odd. Its same the same over here and it totally works out, just interesting...

Indeed. Finding good C++ devs is also more difficult, at least in my experience. EOSFinex and matching engine are relying on C++ for example. We use a lot FFI also both in Node and in Ruby to improve our routes under the hood
