I generally don't gamble, but I do defer buying plane tickets to last minute, which is the same thing I guess

Well, if the expected price is lower, even when the variance is higher, and you have pockets deep enough to deal with that variance, then it's the way to go! (idk if the expected price is lower on average though)

I personally favor buying them months in advance, looking in 2-3 places (Gflight, skyscanner, and airline websites), and you can even find sometimes super cheap business class tickets! Cheaper than economy! which makes no sense to me, but it happens.
