There are plenty of open source processor designs for a wide range of microarchs and ISAs. UltraSPARC most certainly is *not* the only one.

Sure, there are many reversed cores at http://opencores.org and similar, but I meant CPU cores released open source by original vendor.

Yes, and there are plenty of those. Like the myriad of open source RISC-V cores, or the lattice lm32, or OpenRISC.
