Huh! That's weird! I can only assume that the plane line is actually always rendered 2D and has a curve applied for aesthetic reasons. It's in no way accurate and just portraits a hop from one point to another.
It's difficult to be sure how the line is drawn since that's hidden deep in proprietary Maps code. But on their drawing API I do see an option for geodesic.
