I'm not a fan of the strip approach either but I see why you do it. If I build with -g I want debug info in installed files too. And if I don't, I put -g0 in CFLAGS and save huge amount of time and build space.

Use --strip-debug or --strip-unneeded.

We are using -S which, at least on Linux, is an alias for --strip-debug.
