Sourdough is a beautiful process, and its flavor can’t be replicated without a real starter. But, it’s time consuming, and, for a beginner, the end results are not guaranteed. It will take a week, maybe two, to create a healthy starter. That’s a long time to wait to start baking!

Once you’ve gotten that down, I recommend getting a book. “Flour Water Salt Yeast” is excellent. It’s more than just a set of recipes. It covers equipment and many techinques from start to finish in great depth (including pre-ferments and sourdoughs).

“Tartine Bread” is a beautiful book, but I actually don’t recommend it as your first book. It only covers sourdough, and 1/3 of the book is actually not bread.

I am having a hard time with this. On one hand, I want to bake things. On the other hand, I don't want to eat all the carbs-- and I know I will if I start baking.

Extra? I never had extra :-D If you like toasted bread, it freezes well. Slice it up before freezing, then goes straight into the toaster when you want a slice.
