yup roasted ginger, that’s how we usually do it! in the bag are cloves, cinnamon, fennel seeds, star anise, cardamom, and coriander seeds. you can buy spice bag kits at asian markets
Oh yes, you're right, I had roasted my ginger when I had tried cooking Pho at home... but to be honest, that took so long and you can't do that for 2 persons so I had to eat it for a week... as in Paris, it's easy to find very good Pho that I'm not sure it's worth :D
