Wet dough, 2-week long rise, can break off hunks and bake at any time. Pretty good bread.
i assume this is with no levain or dried yeast at all, otherwise i can't imagine a 2 week sourdough being anything but overproofed and then some

Very, very wet dough. Almost* no kneading. Like I said, I never get past the end of the first week before I've used it all. My preferred pizza dough is also very wet and a five day rise actually...
