Wet dough, 2-week long rise, can break off hunks and bake at any time. Pretty good bread.

Right? I've always run out by day seven or eight but it's definitely better after a few days. Easy to bang together a mix on a weekend. One random night shape the dough, let it sit for 30 minutes, and bake right before I go to bed. Wake up to cooled fresh bread, can't complain

i assume this is with no levain or dried yeast at all, otherwise i can't imagine a 2 week sourdough being anything but overproofed and then some
