Not I, but I know what you mean by "we". I think it's inherently problematic to think that physics (or indeed any science that deals with significantly less noisy data than, e.g., psych) is more scientific because they don't (need to) plot error bars.

My brother has a degree in Astrophysics and complained about how they don't deal with (mainly because they really do not need to) noisy date and how to account for it in their models. It's not taught because it's not needed directly but it's a gap nonetheless in their scientific
