So if we are referring to sex are female/male are ok (ish)?

I think so yes, if that fits with a person's sex (so, intersex etc aside). Just find it odd to refer to one another's sex in contexts where that seems irrelevant.

I agree, I also find it very odd to attempt to identify a person's sex in an irrelevant context. My problem is that I also believe that referring to gender might be irrelevant in many context (think of a job application) Why is it needed to know the gender of the applicant?

Sometimes it is needed, generally not. For example to address lack of diversity or to carry out jobs where it would otherwise be impossible (women's officer, working in a rape survivor's unit, etc).

I understood that when I saw the labels :) Gives ppl insight in the (lack of) diversity of their own interactions (on one aspect of diversity, that is).

Not in every context but in this one, what can be measured can be improved!
