Recently, I've witnessed some senior academics mock PhDs & postdocs for choosing industry. Apart from the utterly baseless points raised (hours are flexible in many data science jobs, workloads are often similar, etc.) — it's completely out of order in general. I see you.

out of order to mock anyone's choices! my experience is quite different - I've (thankfully) never heard anyone mock students for going to industry, and the data science jobs I'm familiar with are 9-5 jobs with x days of paid vacation a year... US vs UK?

I think most data science jobs in the UK, in London at least, are even more lax than 9-5, being more like 9.30-5ish and then Fridays early home-time, etc. So it's comparable to postdoc hours as they are also expected to do work as and when needed if deadlines loom.
