To do this traditionally, if you want, fry halloumi slices, place in toasted pitta bread with sliced tomato, plus lemon juice (optional).

I always fry halloumi with olive oil. I grew up without non-sticky pans :-) I also fry suluguni, a Georgian, similar, cheese...
