Git is a firehose - features upon features, many more suited for huge software teams. Also, GUIs aren't necessarily the devil - for my RAs,

if they've never been in the command line they use GitHub desktop 2 start - build confidence in the lab 1st then give them more power :)

I often find the UI confusing having started using git via the CLI, but generally agree that UIs can make it less scary

Certainly but only if we're talking broadly. In specific cases GUI can be a bad idea, like the HPC case I mentioned.
