Just read a discussion about email etiquette. Lots of people saying it is the height of rudeness to start an email just with the person’s name. That one should alwsys start with Hi/Hello/Dear ... Is this a thing? Have I been unintentionally rude for years?

I think it can come across as rude, but I also know many people who do it with zero intention of being rude, so I generally don't take offense. Nonetheless, I recommend against it.

that's shocking news to me. it's my normal way of emailing. i like the simplicity. perhaps we need a poll to see how people feel about it?

This is surprising to me too. It’s never bothered me. I do get annoyed when people email me with “Hi,” and omit my name entirely (unless it’s a close friend) — particularly when they persist in doing that although I use their name

Yes, and surprisingly often students do this (omit your name while they are being addressed with theirs)

It now occurs to me that this might sometimes also reflect insecurity about how to address someone (I.e. whether to do Hi Dr. LastName or Hi FirstName), so they end up with just Hi. But I'm pretty sure some are just lazy.

I give them the benefit of the doubt for the first email, but not after the second/third/tenth where I address them with their name and sign off with what they can call me

Nah, I let it go. The annoyance is minor in the grand scheme of things, and I try not to let it affect how I interact with the person. Have you tried anything?

I have explained it. Especially because I think "what if I let it slide and they do it to somebody else and miss out on important life stuff".
