Try looking up FODMAPs & IBS. Every person has a different set of triggers, but there are some really common ones (e.g., onions, garlic, beans), and they unfortunately make veggie eating really difficult (although not impossible) for people w/ IBS.

Even some tofu can be an issue. Whole grains are a nightmare for many, not to mention a lot of fruits & vegetables. It's a really tricky position to be in. Few will want to pre-inform an organizer of all of their 'can't eats' - it's often just easier to eat what seems safe.
