I had ideas for a lab name that captured what I do... but the resulting name was too generic, and also overlapped with the scope of other PIs in my dept. ...so I gave up on that and just carried on doing whatever I thought was interesting.

Yes this is exactly the problem. Anything broad enough to cover what a given PI does will be so broad its pompous. If you go more specific, do you change the name if you start a new topic? The reality is that labs are largely defined by what the PI does. No reason to deny that.
