As a runner I filled in as expo for weeks when we had no chef. When the new chef came on (an ex marine) he didn't like to be told when to fire dishes. With him at the helm the waits got to be almost 2 hours between courses til he finally caught on.

I did the same job but as an Air Force aircraft maintenance expiditer. It's a little different when its national security and fighting wars.
