        If you're really brave, and really serious about getting crispy fries from the oven, then skip the olive oil (which has too low a smoke point for this recipe anyway) and use bacon fat.

        Not a bad idea, but like the other posters said it will likely cause smoking. Imo the best way is to soak the fries in cold water for 30~ min to get out the excess starch, the main culprit of sogginess

        This recipe is perfect, EXCEPT use 2 tablespoons of melted duck fat instead. Olive oil will burn at that temp & leave a bitter taste.
