Why not just make hydrogen? Store and ship through pipelines. Do same with solar and wind. Electricity is used to separate hydrogen atom from water molecule.

Because the Hindenburg. Big bada-boom if anything goes wrong. You could do with something with fuel cells, but they're not well-suited to demand spikes.

Neither is wind and sun good for demand spikes, but it is a way to store potential energy. Hydrogen fuels have come a long way since Hindenburg.
