In Greek, this meal is called "Garithés mé Pilafi" (prawns with rice). If the sauce is not tangy, there is no point in making it, so the right feta is essential. If you want to be fancy, try other crustaceans. Oh, and save time by using canned tomatoes with some tomato paste.

Yes, that’s the pilafi. I have made it with brown rice and pasta but the best match is white rice.

that's the thing, σαγανάκι doesn't have any rice in it so they're different

The rice is not meant to be in it; the saganaki sauce goes on the rice. As good as the sauce tastes, I would not consider it a full meal without the rice.

I had no idea, we usually throw chunks of bread in the resulting saganaki broth which substitutes for the pilafi carbs
