Holy shit. America has just discovered ‘Millionaire shortbread’. You are very late to the party, but you are very welcome.

It's not a cookie, it's shortbread. The clue is in the name.

Not a cookie. Give credit to the UK, please. We have little in the way of culinary clout. Christmas pud and custard are about it. Have pity.

Nanaimo bar 🇨🇦 with caramel instead of custard. How creative.

Actually, the caramel should be soft and squishy, not chewy. The chocolate should just hard enough and thick enough to snap when you bit it.

The last time I made this, I put diced cinnamon apples in the caramel layer. The office sent a message that I was welcome for an encore anytime I felt like baking. 🍏 Splenda brown sugar is great in place of regular brown sugar-but not any other brand.
