Can someone explain how the total fat scales linearly but not the calories? Maybe calories can be rounded to the nearest multiple of 5?

That seems likely. There are so many weird rounding shenanigans in nutrition labeling. It's a good example of adversarial/"game theory" dynamics in statistical systems!
