All of this negates that cuisine has always been influenced by trade and the movement of people. Does he really think the food served in ethnic region of China hasnt changed over the centuries? The diversity is due to that flux. Restaurants cook what sells. We eat what we like.

Exactly this. The very concept of the food at a certain restaurant being ‘authentic’ is complete bullshit. Like saying “the only real lasagna is how my mom makes it!”
