This appears to be swaps between native BTC and stacks assets, not other non-BTC chains. Am I understanding?

Yep, correct. So USDC issued on Stacks side can be swapped by doing a pure BTC transaction. Same for NFTs etc.
Smart contracts on Stacks can read/process and react to BTC transactions and that’s what makes this possible.
