Forget all of your "non-stick" cookware; non-stick cookware prevents food from sticking to the bottom. We want food to stick to the bottom because when we add the proper liquid to the pan -- citrus acid, wine, water, vinegar, WHATEVER -- the stuck parts will release.

These stuck parts are delicious. I won't go into specifics, but the are one of the foundations of flavor. Without a wooden spoon or a wooden scraper, you won't be able to incorporate these aspects of your dish into your dish as well as you would if you had your scraper.

Lets get back to the "mistake" part. Non-stick stops food burning on the pan, so in a certain sense, it stops you from being aware how your food is cooking in addition to impairing flavor. Lets say you "make a mistake" and the bottom of one of your dishes becomes ruined.

Well... if you add a deglazing liquid and scrape the bottom and then reduce the heat... you didn't make a mistake. You just improved your dish. In fact, an individual can burn - deglaze -scrape - burn - deglaze -scrape over and over to develop more and more flavor.

A metal spoon will scrape your pan. A spatula won't scrape the bottom. You *need* a wooden scraping tool. This tool embodies flexibility and the ability to fix a mistake -- that's why it's so important.

These are better for flipping all protein (except fish) than what you use. They allow you to flip individual vegetables or manipulate individual elements you otherwise wouldn't be able to manipulate with ease. What does this tool represent? The power of simplicity.
