      The Joe Rogan approach. I like it. I believe he kills an elk every 6 months and eats everything after vacuum-sealing it. And he does it with a bow and arrow.

      Yes, it’s been my intention to take up large-mammal hunting, but getting into it takes a lot of equipment and training, so I haven’t. I do eat a lot of animal bits that Americans generally don’t. Partly for ethical reasons, partly health, and partly because they’re delicious

      Like kidney and livers? Organs are fantastic for their nutritional quality. I need to work on my seasoning skills though. Liver rarely tastes good to me.

      Yes, and gristly bits and my wife cooked a whole pig’s head recently for example. (I don’t especially recommend that). It’s easy to overcook liver; it should be pink inside. It get a sort of grainy bitterness if you cook it through. Good with fried onions and Coleman’s mustard

      Pig head is 'The Henderson' territory....your wife sounds like a wonderful lady, and a serious cook. Fergus and a chef I knew taught me how to make use of my butcher's bins - effectively. Plus, internalising the externalities beats virtue signalling, all day.
