I may have figured out why my Serious Eats skillet pizza dough failed so hard... Kenji mentioned folding the dough off-camera and I think a total lack of gluten development (not mentioned in the recipe! I went back and checked!) made mine _miserable_ to work with

(tbc the pizza itself was pretty tasty but the dough was absolute mindmurder to work with, it just slopped around and stuck to my hands like epoxy despite me using like half a cup of flour to try to work with it)

The last batch of pizza I made was tricky to work with, only later to realise I picked up the wrong bag of flour
it was tasty, but a real pig to work with
