I tried to talk across a skill asymmetry about these and all I got back was a sigh. Humans are funny.
Those videos are a nice chunk of British culinary history. Lots of people dislike Marco for his TV and Knorr antics, but he’s still one of the greats. I worked with one of his pastry chefs, who spoke about his abilities in hushed tones.
Perhaps the best thing I ever did to improve my cookery skill was cook through White Heat. It was a ludicrous & costly thing to do, but I learned a lot and it seemed to work well as a sort of protective bubble at a time when I was very depressed.
I remember taking forkful of the sea bass cooked with a red pepper sauce, and actually smiling. It was the first time I’d laughed for a while, holy crap it was so good...my heart just opened a bit and the depression lifted soon after that. I get a grateful tear remembering it.
