Does anyone know what it’s called when you study how people move through a given space? (eg: the patterns of waiters moving through their section/s?) Google just keeps sending me results for ergonomics and urban planning. Derp.

I guess it depends on what aspect of movement you’re studying and what kind of analytic framework you’re using. Ergonomics is not far off imo. ‘Time-and-motion studies’ is the field that fits a Taylorist framework - ‘workplace studies’ fits a more ethnomethodological framework.
