What are examples of religious texts (or at least text written from a religious point of view) that would be useful for others to read, for reasons mostly independent of that religion? e.g. buddhist meditation guides, Jewish laws of speech might be examples.

Interesting question. Ikkyū’s poetry is based in Zen practice but is v.accessible. I’d probably recommend that nut Trungpa — Myth of Freedom — as his sections on negative emotion & love translates beyond Buddhism; although may require translation to work w/o mahamudra context.
