Yes some cuisines have a magical code which require deep exploration and/or personal transmission - Indian food falls into this category. So many secret tips and hidden details. Thai is another example - hard to mimic well unless you’re guided through by someone who knows.

Well, here are some things I really liked: - wanting cake as a young kid was the genesis for my interest, too - cooking is really accessible, you have to get v.fancy before it gets hard - everything in a pro-kitchen is hard, because timing/volume - knife skills are good for you

Great article! Enthusiastically yessed throughout. Living in airbnb places, it’s extraordinary how few kitchens advertised as ‘well equipped’ have a good frying pan and a sharp knife. I often carry knives and a small flatstone with me.
