Is sometimes use samples and loops to build the song, and the replace them with my own stuff gradually as the song develops.

That makes sense to me. Give you a starting point to work from, then let the project evolve to the point you can replace the sample. Very easy to fall into the trap of being unwilling to part with it though (so it seems to me anyway. Not sure how universal that is).

I feel OK with sampling so long as it's transformative in some way. Have you looked into plunder phonics? It's really interesting what can be done with sampling
