Big DAW templates are the musical equivalent of bringing all your emotional baggage and past issues into a new relationship. Blank sessions ftw 
I find them super useful for songs (backing vocals/guitars/drums ready routed to groups with compressors/EQs pre-loaded etc) but for soundtrack work I can imagine it is very freeing to have that blank slate!

To add to that... I think another reason templates work so well for me is I tend to get too caught up in technical tweaking instead of freely composing during the early stages and a template can help reduce that :)

Especially if you’re making an album and want the same ish setup for every song, tweaking the session individually as you start tracking and mixing.
