is the "Prevent tracking when viewing message" a full feature pixel blocker? Does it block all (or most) spy pixels in emails? Is it only read data it blocks or other data like IP, no. of times, etc. as well?

This best-effort feature blocks tracking resources from 70+ services. It does not block every single 1x1 image (for long-winded technical reasons). A shield icon appears in the header when trackers are blocked.
For absolute privacy, you may disable automatic image loading.
