If you have Gmail shortcuts enabled, the ⇧⌘V mapping is on the list and coming!
In the meantime (or if you don't have Gmail shortcuts enabled), the standard macOS shortcut for this is ⇧⌘⌥V (Edit > Paste & Match Style).
