I just started using Mimestream today and I am in LOVE. I do have one question, though, as I learn my way around the app: is there a way to list inbox emails from oldest to newest rather than newest to oldest?

Unfortunately, no, and it's not an easy option to add, as the Gmail API is geared around newest-to-oldest. In the future when Mimestream also supports IMAP, this might be possible to add then. It will be a while until this happens, though.
