They really should have made it possible to show a different icon on Big Sur for the same app.

Seriously. In the earlier betas, having a AppIcon-1016.icns in your bundle worked, but it looks like this stopped working (I filed FB requesting this functionality). In the meantime, NSDockTile is the only option, which only works if the app is running – very confusing.
